A quick and easy recipe combining the flavors of pizza with the crispy texture of quesadillas, perfect for busy weeknights or casual snacks.

Ingredients

  • Medium-sized flour tortillas
  • Shredded mozzarella cheese
  • Marinara sauce
  • Pepperoni
  • Italian seasoning
  • Olive oil
  • Optional toppings: diced bell peppers, mushrooms, black olives, pineapple

Instructions

  1. Lay out your tortillas, shred the mozzarella, and slice any additional toppings.
  2. Place a non-stick skillet over medium heat and add a drizzle of olive oil to coat the pan lightly.
  3. Spread a thin layer of marinara sauce over one tortilla. Sprinkle shredded mozzarella on top and add chosen toppings. Sprinkle with Italian seasoning.
  4. Place another tortilla over the filling, pressing gently to seal it together.
  5. Carefully transfer the quesadilla to the heated skillet and cook for about 2-3 minutes until the bottom is golden and crispy.
  6. Using a spatula, flip the quesadilla and cook the other side for another 2-3 minutes until golden brown and the cheese is melted.
