  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup (240g) pumpkin puree
  • 1/2 cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) milk
  • For the topping:
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons (30ml) melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ground cloves. Set aside.
  3. In a larger bowl, cream butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla extract, mixing until smooth.
  4. Mix in pumpkin puree until well combined.
  5. Gradually add the dry mixture to the wet mixture, alternating with milk. Mix until just combined.
  6. In a small bowl, combine granulated sugar and cinnamon for the topping.
  7. Pour the batter into the prepared pan and spread it evenly. Sprinkle the cinnamon-sugar mixture over the top, then drizzle melted butter evenly across the surface.
  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cake cool in the pan for at least 20 minutes before slicing and serving.
