These irresistible Pumpkin Spice Sugar Cookies combine the cozy flavors of pumpkin spice with the buttery sweetness of classic sugar cookies, making them the ultimate fall treat.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin spice blend (or 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1/4 teaspoon cloves, 1/4 teaspoon ginger)
  • Optional: Sprinkles, frosting, or caramel drizzle for decoration

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. In a large mixing bowl, beat the softened butter and sugar until light and fluffy (about 2-3 minutes).
  3. Mix in the eggs and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, salt, and pumpkin spice blend.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Avoid overmixing.
  6. Use a cookie scooper or spoon to portion out dough balls. Place them on the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Bake for 10-12 minutes, or until the edges are slightly golden. The centers may look soft—that’s okay!
  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. Decorate as desired or enjoy them plain.

Notes

[‘Don’t overmix the dough to avoid dense cookies.’, ‘Ensure the butter is softened but not melted for the best texture.’, ‘Chill the dough for 15-20 minutes if your kitchen is warm to prevent spreading.’, ‘The cookies should be slightly golden around the edges but still soft in the center—they’ll firm up as they cool.’, ‘Customize the spice level by adding an extra pinch of pumpkin spice blend if desired.’]
