  • 1 tablespoon vegetable oil (for cooking)
  • 3 cloves garlic, minced
  • 1 teaspoon freshly grated ginger

Instructions

  1. Slice the beef thinly against the grain into strips about 1/4 inch thick. Toss with baking soda, 1 tablespoon soy sauce, and 1 teaspoon cornstarch. Let sit for 10 minutes if possible.
  2. In a bowl, whisk together 3 tablespoons soy sauce, oyster sauce, hoisin sauce, sesame oil, 1 teaspoon cornstarch, and beef broth. Set aside.
  3. Trim broccoli into bite-sized florets. Mince garlic and grate ginger.
  4. Heat vegetable oil in a wok or large skillet over high heat until shimmering. Add beef in a single layer and stir-fry until browned but still tender, about 2-3 minutes. Remove beef and set aside.
  5. Add more oil if needed. Stir-fry garlic and ginger for 30 seconds until fragrant. Add broccoli and stir-fry for 2 minutes. Add a splash of water, cover, and steam for 1 minute to keep broccoli crisp-tender.
  6. Return beef to the pan. Stir the sauce and pour over the beef and broccoli. Toss and cook for another minute until sauce thickens and coats everything.
  7. Serve immediately, garnished with sesame seeds and green onions if desired, alongside steamed rice or noodles.

Slice beef against the grain for tenderness. Use high heat and avoid overcrowding the pan to get a good sear. Marinate beef with baking soda for a melt-in-your-mouth texture.
