Refreshing Firecracker Popsicles

Easy 5-layer berry popsicles combining tart berry purees and creamy sweetened yogurt, perfect for cooling off in summer.

Ingredients

  • 3 cups frozen mixed berries (blueberries, raspberries, strawberries)
  • 2 to 3 tablespoons granulated sugar or honey (adjust to taste)
  • 1 tablespoon fresh lemon juice
  • 1 cup plain Greek yogurt
  • 1 to 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Prepare the berry puree: In a blender, combine 1 cup of frozen mixed berries, 1 tablespoon of sugar or honey, and 1 teaspoon of lemon juice. Blend until smooth. Pour into a bowl and set aside. Repeat this process separately for each berry layer, adjusting quantities so you have about ½ cup of puree per layer (total 3 cups berries divided into 3 layers). Allow purees to chill slightly if they warm during blending.
  2. Mix the creamy yogurt layers: In a separate bowl, whisk together the Greek yogurt, 1 tablespoon honey (or more to taste), and vanilla extract until smooth. Taste and adjust sweetness as needed.
  3. Layer the popsicles: Spoon about 2 tablespoons of the first berry puree into each popsicle mold. Smooth evenly with the back of a spoon or spatula. Freeze for 15-20 minutes until firm but not completely solid.
  4. Add about 2 tablespoons of the yogurt mixture on top of the frozen berry layer. Freeze again for 15-20 minutes.
  5. Repeat alternating berry and yogurt layers until molds are full, ending with a berry layer on top.
  6. Insert popsicle sticks gently once the final layer is added. If molds don’t hold sticks upright, cover with foil and poke sticks through to stabilize.
  7. Freeze completely for at least 4 hours or preferably overnight.
  8. To unmold, run warm water over the outside of the molds for a few seconds and slide popsicles out. Serve immediately or store in a freezer-safe container for up to 2 weeks.

Notes

Chill purees and yogurt mixtures before layering to prevent blending of layers. Freeze each layer until firm but not rock hard to maintain distinct stripes. Strain berry puree to remove seeds for smoother texture. For dairy-free version, substitute Greek yogurt with coconut or almond milk yogurt. Avoid microwaving to soften popsicles; instead, run warm water over molds or let sit at room temperature for 3–5 minutes.
