  • 1 cup (8 fl oz) chilled sparkling wine or prosecco
  • 1 tablespoon fresh squeezed lemon juice
  • 2 tablespoons simple syrup (optional)
  • 2 cups ice cubes
  • Mint leaves for garnish (optional)

Instructions

  1. Prepare the peaches: wash and peel peaches by scoring an ‘X’ at the bottom, blanching in boiling water for 30 seconds, then plunging into ice water. Slice and remove pits.
  2. Make the peach puree: place sliced peaches in blender and pulse until smooth but slightly textured.
  3. Add lemon juice and simple syrup to the peach puree and blend briefly to combine. Adjust sweetness as needed.
  4. Add ice cubes to the blender, then slowly pour in chilled sparkling wine. Pulse gently until ice is crushed and mixture reaches slushie consistency (about 20-30 seconds).
  5. Serve immediately in tall glasses, garnished with fresh mint or a thin peach slice.

Notes

Use fresh peaches for best flavor; frozen peaches can be used if thawed slightly. Use dry or semi-dry sparkling wine to avoid overly sweet drinks. Pulse ice gently to preserve bubbles. Keep ingredients chilled before blending. For non-alcoholic version, substitute sparkling wine with sparkling water or lemon-lime soda.
