A simple, easy-to-make frozen cocktail blending ripe peaches, bourbon, lemon juice, and crushed ice for a refreshing summer drink with a perfect balance of fruity sweetness and smoky warmth.

  • 2 large ripe peaches, peeled and sliced
  • 4 ounces (120 ml) bourbon
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1 to 2 tablespoons (1530 ml) simple syrup
  • 2 cups (about 480 ml) crushed ice
  • A small handful of fresh mint leaves (optional, for muddling and garnish)

Instructions

  1. Peel the peaches by blanching in hot water for 30 seconds or using a paring knife, then slice into 1-inch chunks.
  2. Place peach chunks and about 6 fresh mint leaves into a bowl or blender jar. Gently muddle with a muddler or the back of a spoon for 1-2 minutes to release juices and oils without pulverizing.
  3. Add 4 oz (120 ml) bourbon, 1 tablespoon (15 ml) fresh lemon juice, and 1-2 tablespoons (15-30 ml) simple syrup to the muddled mixture.
  4. Add 2 cups (480 ml) crushed ice to the blender. Pulse on medium speed to combine, then blend on high for about 20 seconds until smooth and slushie-like.
  5. Taste and adjust sweetness or strength by adding more syrup, water, or ice as needed.
  6. Serve immediately in chilled glasses, garnished with a sprig of mint or a thin peach slice.

Notes

Use ripe but firm peaches to avoid mushy texture. Crushed ice is preferred over cubed for smooth slush texture. Muddle mint gently to release aroma without overpowering. Prepare peach and bourbon mixture ahead and blend with ice just before serving for best texture. Frozen peaches can be used if fresh are unavailable, thaw slightly before use. For less alcohol, reduce bourbon by half and top with sparkling water.
