  • 4 cups fresh seedless watermelon chunks (about 600 grams)
  • 1 cup (240 ml) tequila blanco
  • ½ cup (120 ml) fresh lime juice (about 45 limes)
  • ¼ cup (60 ml) triple sec or orange liqueur
  • 2 tablespoons (30 ml) agave syrup or honey (optional)
  • 2 cups (about 300 grams) ice cubes
  • Tajin seasoning for rimming the glass
  • Coarse sea salt (optional, mixed with Tajin for rim)

Instructions

  1. Prepare the glasses by mixing Tajin and coarse sea salt on a small plate. Moisten the rim of each glass with a lime wedge, then dip into the Tajin-salt mix to coat evenly. Set aside.
  2. Juice the limes using a citrus juicer to get about ½ cup (120 ml) fresh lime juice, removing any seeds.
  3. Cut about 4 cups (600 grams) of seedless watermelon into chunks. If using frozen watermelon, thaw slightly before blending.
  4. In a high-speed blender, combine watermelon chunks, tequila blanco, fresh lime juice, triple sec, and agave syrup if using. Add ice cubes last.
  5. Pulse the blender a few times to crush the ice, then blend on high speed for 30-45 seconds until smooth and slushy. Scrape down the sides if needed.
  6. Taste and adjust sweetness or thickness by adding more agave syrup, lime juice, or a splash of cold water as needed. Blend briefly again if adjustments are made.
  7. Serve immediately by pouring the slush into the Tajin-rimmed glasses. Garnish with a lime wedge or a small watermelon slice if desired.

Notes

Do not blend the ice too long to avoid watery texture; aim for a slightly chunky, icy slush. Use ripe, juicy watermelon for best flavor. If storing leftovers, keep in an airtight container in the freezer and stir or pulse before serving. For a non-alcoholic version, substitute tequila and triple sec with sparkling water or citrus soda. Rimming the glass with Tajin mixed with coarse salt adds a smoky, salty kick that balances sweetness.
