Refreshing Frozen Watermelon Mint Mocktail Slushies

A quick and easy summer drink featuring frozen watermelon, fresh mint, lime juice, and a touch of honey, blended into a refreshing icy slushie perfect for hot days and gatherings.

Ingredients

  • 4 cups seedless watermelon chunks, frozen
  • 1 handful fresh mint leaves (about 1012 leaves), bruised
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or agave syrup (optional)
  • 1 cup ice cubes
  • Splash of cold water or sparkling water

Instructions

  1. Freeze the watermelon chunks for at least 4 hours or overnight.
  2. Gently bruise the fresh mint leaves to release their flavor.
  3. Squeeze fresh lime juice and strain out seeds.
  4. Add frozen watermelon chunks, bruised mint leaves, lime juice, honey or agave (if using), and ice cubes into a high-speed blender.
  5. Blend on high speed for 1-2 minutes until smooth and slushy. Add a splash of cold or sparkling water if the mixture is too thick.
  6. Taste and adjust sweetness or mint flavor as desired by adding more honey or mint leaves and pulsing once more.
  7. Serve immediately in chilled glasses, garnished with a mint sprig or watermelon wedge.

Notes

Use ripe, juicy watermelon for best sweetness. Freeze watermelon chunks solid for authentic slush texture. Muddle mint gently to avoid bitterness. Blend in short bursts to prevent ice melting. Serve immediately for best texture. Store leftovers in airtight container in freezer up to 24 hours and re-blend before serving.
