A quick and easy tropical drink combining ripe mangoes, creamy coconut water, fresh lime juice, and a spicy Tajin seasoning for a refreshing summer beverage.

Ingredients

  • 2 medium ripe mangoes, peeled and chopped
  • 2 cups (480 ml) natural, unsweetened coconut water
  • 2 tablespoons fresh lime juice
  • 12 tablespoons honey or agave syrup (optional)
  • 1 teaspoon Tajin seasoning plus extra for garnish
  • Ice cubes as needed
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Peel and chop 2 medium ripe mangoes into chunks.
  2. Roll 2 limes on the counter, cut, and extract about 2 tablespoons of fresh lime juice using a citrus juicer.
  3. Add chopped mangoes, 2 cups coconut water, and lime juice into a high-speed blender. Blend on high for 1-2 minutes until smooth and creamy. Add more coconut water if too thick.
  4. Taste the blend and add 1-2 tablespoons honey or agave syrup if desired. Blend again for 20-30 seconds.
  5. Sprinkle 1 teaspoon Tajin seasoning into the blender and pulse briefly to mix.
  6. Fill glasses with ice cubes and pour the mango coconut agua fresca over. Garnish with a light dusting of Tajin and fresh mint leaves if desired.
  7. Optional: Strain the mixture through a fine sieve for a smoother texture.
  8. Serve immediately for best flavor.

Use ripe mangoes for best flavor. Adjust Tajin seasoning carefully to avoid overpowering the drink. Fresh lime juice is essential for brightness. Chill ingredients and glassware for a refreshing experience. Can substitute frozen mango if thawed slightly. Store leftovers in the refrigerator up to 24 hours and stir before serving.
