A refreshing summer cocktail combining peach-infused bourbon, sweet tea, fresh mint, and a hint of lemon juice for a perfectly balanced, crowd-pleasing drink.

  • 2 ounces peach bourbon (bourbon infused with fresh peaches, optional)
  • 6 ounces freshly brewed sweet tea, chilled
  • 1 ripe peach, sliced thin
  • 68 fresh mint leaves (plus extra for garnish)
  • 1 ounce simple syrup (optional)
  • 0.5 ounce fresh lemon juice
  • Ice cubes (large preferred)

Instructions

  1. Prepare the peach bourbon by slicing one ripe peach and adding it to a bottle of bourbon. Let it infuse for at least 4 hours or overnight in the fridge. Alternatively, add a splash of peach juice if short on time.
  2. Brew 2-3 black tea bags in 2 cups (16 fl oz) boiling water for 5 minutes. Remove tea bags and stir in 2 tablespoons sugar while warm. Chill completely in the fridge or over ice.
  3. Place 6-8 fresh mint leaves in a mixing glass and gently muddle with a muddler or wooden spoon to release oils without shredding.
  4. Add 2 ounces peach bourbon, 6 ounces chilled sweet tea, 1 ounce simple syrup (optional), and 0.5 ounce fresh lemon juice to the muddled mint.
  5. Stir or shake gently with ice for about 10 seconds to chill and mix.
  6. Fill a tall glass with large ice cubes and strain the cocktail into it, leaving mint bits behind if preferred.
  7. Garnish with thin peach slices and a sprig of fresh mint.
  8. Serve immediately and enjoy.

Notes

Gently muddle mint to avoid bitterness. Use large ice cubes to prevent quick melting. Adjust sweetness with simple syrup and lemon juice to taste. For a non-alcoholic version, omit bourbon and add more peach juice and tea. Store sweet tea and bourbon separately if preparing in advance.
