A quick and easy homemade summer cooler combining fresh strawberries and creamy coconut milk for a refreshing, lightly sweetened pink drink.

  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup strawberry juice or hibiscus tea, chilled
  • 1 cup full-fat coconut milk (canned or carton)
  • 2 tablespoons simple syrup (or honey/agave syrup to taste)
  • Ice cubes, as needed
  • 1 teaspoon freshly squeezed lemon juice
  • Optional: fresh mint leaves for garnish

Instructions

  1. Rinse 1 cup fresh strawberries, hull, and slice into quarters.
  2. Place sliced strawberries in a blender or food processor. Add 1 teaspoon lemon juice and blend until smooth, about 30 seconds. For a pulp-free drink, strain the puree through a fine mesh sieve.
  3. If using hibiscus tea instead of strawberry juice, steep 1 hibiscus tea bag in 1 cup hot water for 5 minutes and chill completely.
  4. In a pitcher, combine the strawberry puree (or juice), 1 cup chilled coconut milk, 1 cup strawberry juice or hibiscus tea, and 2 tablespoons simple syrup. Stir gently and adjust sweetness if needed.
  5. Fill glasses with ice cubes and pour the refresher over. Stir lightly to chill evenly.
  6. Garnish with fresh mint leaves or a thin strawberry slice and serve immediately.

Notes

Use fresh strawberries for best flavor; frozen can be used if thawed and strained. Adjust sweetness with simple syrup or natural sweeteners. Shake canned coconut milk well before use to mix cream and liquid. Chill ingredients beforehand for a colder drink. For a frothier texture, pulse the mixture a few extra times in the blender before serving.
