Refreshing Strawberry Prosecco Popsicles

A quick and easy homemade summer treat combining fresh strawberries and crisp prosecco for a bubbly, refreshing popsicle perfect for gatherings and warm days.

Ingredients

  • 2 cups (300 grams) fresh strawberries, hulled and halved
  • 1 cup (240 ml) prosecco (dry or extra dry)
  • 1/4 cup (60 ml) simple syrup (homemade or store-bought)
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1/4 cup (60 ml) water
  • Optional: a few sprigs of fresh mint leaves

Instructions

  1. Wash, hull, and halve about 2 cups (300g) of fresh strawberries.
  2. Make simple syrup by combining equal parts sugar and water in a small saucepan. Heat gently until sugar dissolves, then cool to room temperature.
  3. Toss the strawberries into a blender or food processor and blend until smooth but still slightly textured, about 1-2 minutes.
  4. In a mixing bowl, combine the simple syrup, fresh lemon juice, and water. Stir well to blend the flavors.
  5. Pour the strawberry puree into the bowl with the syrup mixture. Gently fold in the prosecco, stirring slowly to preserve the bubbles.
  6. If desired, finely chop fresh mint leaves and stir them into the mixture.
  7. Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Insert sticks and tap molds gently to remove air bubbles.
  8. Freeze for at least 6 hours or overnight until firm.
  9. To unmold, run warm water over the outside of the molds for a few seconds and gently pull the sticks. Serve immediately.

Notes

Do not overblend strawberries to avoid watery popsicles. Add prosecco last and stir gently to preserve fizz. If popsicles are too icy, add a splash more simple syrup next time. For a non-alcoholic version, substitute prosecco with sparkling water or lemon-lime soda. Store popsicles in an airtight container or freezer bag and consume within one week for best flavor.
