The perfect balance of sweet, salty, and creamy—these roasted sweet potato rounds drizzled with honey and topped with crumbled feta are a crowd-pleasing side dish that looks and tastes gourmet.

Ingredients

  • 2 medium-sized sweet potatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 tablespoons honey
  • 1/4 cup crumbled feta cheese
  • Fresh thyme or parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes. Slice them into 1/4-inch thick rounds.
  3. Place the rounds in a large bowl and drizzle with olive oil. Add a generous pinch of salt and pepper, then toss to coat evenly.
  4. Lay the sweet potato rounds in a single layer on the prepared baking sheet, avoiding overlap.
  5. Roast in the preheated oven for 20 minutes, flip the rounds, and roast for another 10-15 minutes until golden brown and caramelized on the edges.
  6. Remove the sweet potatoes from the oven and let them cool for 5 minutes. Drizzle with honey while still warm.
  7. Sprinkle crumbled feta over the rounds. Add fresh thyme or parsley for garnish, if desired.
  8. Transfer to a serving platter and enjoy warm.

Notes

For a slightly melted feta, add it during the last 5 minutes of roasting. Keep an eye on the oven to prevent burning. Optional substitutions include maple syrup for honey or goat cheese for feta.
