  • 34 slices thick-cut bacon (applewood smoked preferred)
  • ½ ripe avocado, mashed with a pinch of kosher salt and a squeeze of fresh lime juice
  • 1 large egg, fried or scrambled (optional)
  • 1 slice sharp cheddar or pepper jack cheese
  • 1 tablespoon mayonnaise
  • A handful of baby spinach or arugula
  • Freshly cracked black pepper, to taste
  • Optional extras: tomato slices, pickled jalapeños, or hot sauce

Instructions

  1. Place 3-4 slices of thick-cut bacon in a cold non-stick skillet. Turn heat to medium and cook for 8-10 minutes, flipping occasionally until crisp. Transfer bacon to a plate lined with paper towels to drain excess fat.
  2. While bacon cooks, scoop half a ripe avocado into a small bowl. Add a pinch of kosher salt and a squeeze of fresh lime juice. Mash with a fork until creamy but still slightly chunky.
  3. Toast two slices of hearty bread until golden and crisp, about 3-4 minutes using a toaster or grill pan.
  4. In the same skillet (wipe out excess bacon fat if preferred), crack one large egg. Fry to desired doneness or scramble gently. Season with freshly cracked black pepper.
  5. Spread about 1 tablespoon of mayonnaise evenly on each toasted bread slice. On one slice, layer mashed avocado, then crispy bacon strips, cooked egg, a slice of cheese, and fresh greens.
  6. Top with the second slice of bread, mayo side down. Press gently, slice in half if desired, and serve immediately while warm.

Notes

Start bacon in a cold pan for even crispiness. Mash avocado just before assembling to prevent browning. Toast bread just before assembly to keep it crisp. For melty cheese, briefly broil or heat assembled sandwich in a hot skillet for 30 seconds. Variations include vegetarian bacon substitutes, spicy jalapeños, or low-carb bread alternatives.
