  • 2 tablespoons olive oil or butter
  • 8 ounces cremini or button mushrooms, sliced
  • 4 large garlic cloves, minced or finely chopped
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • Optional: ¼ cup white wine for deglazing
  • Optional: fresh parsley for garnish

Instructions

  1. Pat chicken thighs dry with paper towels and season generously with salt and pepper on all sides. (5 minutes)
  2. Heat olive oil or butter in a large skillet over medium-high heat until shimmering. Place chicken thighs skin-side down and cook without moving for 6-7 minutes until skin is deep golden and crisp. Flip and cook the other side for 4-5 minutes. Remove chicken and set aside. (12 minutes)
  3. Reduce heat to medium. Add sliced mushrooms to the pan and sauté in the rendered chicken fat until browned and fragrant, about 6-8 minutes. Stir occasionally. (8 minutes)
  4. Stir in minced garlic and thyme. Cook for 1-2 minutes until garlic is aromatic but not browned. (2 minutes)
  5. Pour in chicken broth (or white wine plus broth if using) and scrape up browned bits from the pan. Let simmer and reduce slightly for 3-4 minutes. (4 minutes)
  6. Lower heat to medium-low. Stir in heavy cream and Parmesan cheese. Cook gently until cheese melts and sauce thickens slightly, about 3-5 minutes. (5 minutes)
  7. Return chicken thighs to the pan, skin side up. Cover loosely and simmer gently for 12-15 minutes until chicken is cooked through (internal temperature 165°F). Sauce will thicken more. (15 minutes)
  8. Taste sauce and adjust seasoning with salt and pepper if needed. Garnish with fresh parsley if desired. Serve immediately. (2 minutes)

Pat chicken dry thoroughly for crispy skin. Do not overcrowd the pan when browning chicken. Let mushrooms caramelize fully for depth of flavor. Add garlic after mushrooms to avoid bitterness.
