Ingredients

Scale
  • 1 pound (450g) ground beef (85% lean)
  • 8 ounces (225g) chicken livers, cleaned and finely chopped
  • 1 ½ cups (285g) long-grain white rice, uncooked
  • 3 cups (720ml) chicken broth
  • 1 medium yellow onion, finely diced
  • 1 medium green bell pepper, diced
  • 2 celery stalks, finely chopped
  • 3 garlic cloves, minced
  • 2 tablespoons vegetable oil or butter
  • 2 teaspoons Creole or Cajun seasoning
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped
  • Hot sauce (optional), a few dashes

Instructions

  1. Rinse 1 ½ cups of long-grain white rice under cold water until water runs clear. Bring 3 cups of chicken broth to a boil in a medium saucepan. Add the rice, stir, reduce heat to low, cover, and simmer for 18 minutes. Remove from heat and let it rest, covered, for 5 minutes.
  2. Rinse the 8 ounces of chicken livers under cold water and pat dry. Trim any fat or connective tissue, then finely chop.
  3. Heat 2 tablespoons of vegetable oil or butter in a large skillet over medium heat. Add diced yellow onion, green bell pepper, and celery. Cook for about 5 minutes until softened and starting to caramelize. Add minced garlic and cook for another minute.
  4. Push the veggies to the side of the skillet and add ground beef and chopped chicken livers. Break them up with a wooden spoon. Cook for 7-8 minutes until meat is browned and no longer pink, being careful not to overcook the livers.
  5. Sprinkle in 2 teaspoons of Creole or Cajun seasoning, 1 teaspoon dried thyme, and season with salt and black pepper to taste. Stir and cook for another 2 minutes.
  6. Fluff the cooked rice with a fork and add it to the skillet with the meat and vegetable mixture. Stir gently to combine and cook over low heat for 3-4 minutes to let flavors meld.
  7. Remove from heat and stir in 2 tablespoons of fresh chopped parsley. Add a few dashes of hot sauce if desired. Taste and adjust seasoning if needed.

Notes

Do not overcook chicken livers to avoid rubbery texture. Use fresh ingredients for best flavor. Add hot sauce or cayenne pepper for extra heat. If rice seems dry, add a splash of chicken broth when combining. Leftovers taste better after sitting overnight.
