  • 4 tablespoons unsalted butter, melted
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon smoked paprika
  • Salt to taste
  • 1/2 teaspoon freshly ground black pepper
  • Wooden or metal skewers (if wooden, soaked in water for 30 minutes)

Instructions

  1. Rinse shrimp under cold water and pat dry with paper towels.
  2. In a mixing bowl, combine melted butter, minced garlic, lemon juice, smoked paprika, chopped parsley, black pepper, and salt. Stir well.
  3. Add shrimp to the bowl and toss gently to coat. Let sit for 15 to 20 minutes at room temperature.
  4. Preheat grill to medium-high heat (about 400°F). Clean and lightly oil grates.
  5. Thread 6-8 shrimp per skewer, leaving a small space between each shrimp.
  6. Place skewers on the grill and cook for 2-3 minutes per side, brushing extra garlic butter marinade over shrimp while grilling.
  7. Cook until shrimp are opaque, pink, and curl into a loose ‘C’ shape; internal temperature should reach 120°F if using a thermometer.
  8. Remove skewers from grill and let rest for 1 minute. Sprinkle with extra parsley and a squeeze of lemon if desired. Serve immediately.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning. Brush shrimp with garlic butter marinade while grilling to keep them moist. Avoid overcooking to prevent rubbery texture. Can bake at 425°F for 8-10 minutes as an alternative.
