Juicy, perfectly seared steak bites cooked in garlic butter and served with a fresh rosemary parmesan dip. A quick and easy recipe perfect for busy weeknights or entertaining.

  • 1 lb sirloin steak, cut into 1-inch cubes
  • 3 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 1 tsp smoked paprika (optional)
  • 1 tbsp olive oil
  • ½ cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tsp lemon juice
  • ½ tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Pat the steak cubes dry with paper towels. Season all sides evenly with kosher salt, black pepper, and smoked paprika if using. Let rest at room temperature for about 10 minutes.
  2. In a small bowl, combine mayonnaise, grated Parmesan, chopped rosemary, lemon juice, and garlic powder. Mix well. Taste and add salt and pepper as needed. Cover and refrigerate until ready to serve.
  3. Place a cast-iron skillet over medium-high heat. Add olive oil and 1 tablespoon of butter. Wait until the butter melts and starts to foam but doesn’t brown.
  4. Add the steak cubes in a single layer, avoiding overcrowding. Sear undisturbed for about 2 minutes, then flip and sear another 2 minutes to develop a deep brown crust.
  5. Lower heat to medium and add the remaining 2 tablespoons of butter and minced garlic. Stir and toss the steak bites quickly for 1-2 minutes until garlic is fragrant and steak is cooked to your liking (medium-rare usually takes about 6 minutes total).
  6. Transfer steak bites to a plate lined with paper towels to drain excess butter if needed. Serve immediately with a generous dollop of rosemary parmesan dip.

Notes

Pat steak dry before searing to ensure a good crust. Avoid overcrowding the pan to prevent steaming. Add garlic near the end to prevent burning. Let steak rest briefly after cooking for juicier bites. The rosemary parmesan dip can be made ahead and tastes better after resting.
