  • Thick sturdy tortilla chips (about 8-10 oz)
  • 1 lb ground beef or turkey
  • 2 cups shredded sharp cheddar and Monterey Jack cheese blend (about 7 oz)
  • 1 cup black beans, drained and rinsed
  • 1 large diced tomato (about 1 cup)
  • ½ small chopped red onion
  • 12 fresh jalapeños, thinly sliced
  • Small handful chopped cilantro
  • 2 sliced green onions
  • ½ ripe avocado or ½ cup prepared guacamole
  • ½ cup sour cream
  • Juice of 1 lime
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat a large skillet over medium heat. Add ground beef or turkey and cook, breaking it up, until browned, about 7-8 minutes. Drain excess fat.
  3. Season meat with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Stir and cook for another 2 minutes.
  4. While meat cooks, dice tomatoes, chop onion and cilantro, slice jalapeños and green onions. Toss with lime juice to keep fresh.
  5. Spread a single layer of tortilla chips on a large baking sheet or oven-safe skillet.
  6. Sprinkle half the seasoned meat evenly over chips, then half the black beans, and half the shredded cheese.
  7. Repeat layering with remaining chips, meat, beans, and cheese.
  8. Bake for 10-12 minutes until cheese is melted and bubbly. Watch closely to avoid burning.
  9. Remove from oven and immediately add fresh tomato-onion-jalapeño mix, dollops of sour cream, and guacamole or sliced avocado.
  10. Garnish with chopped cilantro and sliced green onions. Serve hot with extra lime wedges if desired.
