Savory Maple Roasted Brussels Sprouts with Crispy Bacon

A quick and easy recipe featuring caramelized Brussels sprouts coated in maple syrup and topped with crispy bacon, perfect for holiday tables or weeknight dinners.

  • 1 pound (450 grams) Brussels sprouts, trimmed and halved
  • 6 slices thick-cut bacon (smoked applewood recommended)
  • 2 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Pinch of red pepper flakes (optional)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Trim the stem ends of Brussels sprouts and remove any yellow or damaged outer leaves. Cut each sprout in half lengthwise.
  3. Place bacon slices on a baking sheet and roast in the oven for 10-12 minutes until crispy. Remove bacon and set aside on paper towels to drain excess fat. Keep the rendered bacon fat on the pan.
  4. In a mixing bowl, toss halved Brussels sprouts with olive oil, maple syrup, minced garlic, salt, black pepper, and red pepper flakes if using.
  5. Spread Brussels sprouts in a single layer on the baking sheet with bacon fat. Roast for 20-25 minutes, flipping halfway through, until golden brown and crisp on edges.
  6. Chop the crispy bacon into bite-sized pieces and gently toss into the roasted Brussels sprouts. Drizzle with lemon juice if desired.
  7. Give everything a final toss to combine flavors and serve warm.

Notes

If Brussels sprouts start burning before tender, lower oven temperature slightly or cover loosely with foil after 15 minutes. Use bacon fat for extra flavor. Toss halfway through roasting for even cooking. For vegetarian option, swap bacon with smoked tempeh or coconut bacon and add liquid smoke.
