Shrimp Dirty Rice Recipe – Easy Cajun Classic Packed with Flavor

A one-pan Cajun dish featuring smoky spices, tender shrimp, and perfectly seasoned rice, ideal for family meals or casual dinners.

  • 1 pound medium shrimp, peeled and deveined
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken stock
  • 1/2 pound andouille sausage, sliced
  • 1 large green bell pepper, diced
  • 2 stalks celery, finely chopped
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. If using frozen shrimp, thaw them by placing them in a bowl of cold water for about 10 minutes. Pat dry with paper towels and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced andouille sausage and cook until browned, about 4 minutes. Remove and set aside.
  3. In the same skillet, add the remaining olive oil. Toss in the diced bell pepper, celery, and onion. Sauté for 5 minutes until softened. Stir in the garlic and cook for another minute.
  4. Sprinkle the uncooked rice into the skillet and stir to coat it in the oil and vegetable mixture. Let it toast for 2 minutes for added flavor.
  5. Pour in the chicken stock and bring to a gentle boil. Reduce the heat to low, cover, and cook for 15 minutes.
  6. After 15 minutes, uncover the skillet and scatter the shrimp on top of the rice mixture. Sprinkle with Cajun seasoning and salt. Cover again and cook for another 5 minutes until the shrimp are pink and fully cooked.
  7. Stir in the cooked sausage and fluff the rice with a fork. Garnish with fresh parsley and serve hot.
