A simple and delicious slow cooker pot roast recipe using just five ingredients, delivering tender, juicy beef with a savory, tangy sauce perfect for busy weeknights or cozy family dinners.

  • 3 to 4 pounds chuck roast
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1 packet (about 1 ounce) au jus gravy mix
  • 6 to 8 pepperoncini peppers plus 1/4 cup (60 ml) pepperoncini juice
  • 4 tablespoons unsalted butter
  • Optional: fresh parsley for garnish
  • Optional: salt and black pepper to taste

Instructions

  1. Trim any excessive fat from the chuck roast and pat dry with paper towels.
  2. Optional: Heat a tablespoon of oil in a large skillet over medium-high heat and sear the roast on all sides for 3 to 4 minutes per side until browned.
  3. Place the roast in the slow cooker insert.
  4. Sprinkle ranch seasoning mix evenly over the roast, then sprinkle the au jus gravy mix on top.
  5. Scatter the pepperoncini peppers over and around the roast and pour in the pepperoncini juice.
  6. Place the unsalted butter on top of the roast.
  7. Cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 5 hours until the meat is fork-tender.
  8. Remove the roast and let it rest for 10 minutes.
  9. Shred the beef using two forks.
  10. Taste the sauce and adjust salt and pepper if needed.
  11. Serve the shredded beef with the sauce over mashed potatoes, rice, or sandwich rolls, garnished with fresh parsley if desired.

Notes

Browning the roast before slow cooking is optional but adds extra flavor. Avoid lifting the slow cooker lid frequently to maintain cooking time. If sauce is too thin, simmer it on the stove to thicken. For dairy-free, substitute butter with coconut oil or vegan butter. Adjust pepperoncini peppers to control tanginess and heat.
