Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes). Add the egg, pumpkin puree, and vanilla extract, mixing until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry mixture to the wet ingredients, mixing just until combined. Avoid overmixing to keep the cookies soft.
