  • 1/3 cup pumpkin puree

  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Add the egg, pumpkin puree, and vanilla extract to the butter mixture. Mix until fully combined.
  4. In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix!
  6. In a small bowl, combine the sugar and cinnamon for rolling.
  7. Use a cookie scoop or tablespoon to portion out the dough. Roll each ball in the cinnamon-sugar mixture until fully coated.
  8. Place the cookie dough balls on the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 12-14 minutes, or until the edges are set and the tops look slightly cracked.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 15-20 minutes if it’s too sticky to roll. Use fresh spices for the best flavor. Avoid overmixing the dough to keep the cookies soft.
