  • 2 cups shredded or finely diced cooked chicken
  • 1012 egg roll wrappers
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup corn (fresh, canned, or frozen)
  • 1 cup black beans
  • 1 cup finely diced bell peppers
  • 1/2 cup thinly sliced green onions
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for brushing

Instructions

  1. In a large mixing bowl, combine shredded chicken, black beans, corn, diced bell peppers, green onions, shredded cheese, chili powder, cumin, garlic powder, salt, and pepper. Stir until well mixed.
  2. Lay an egg roll wrapper flat on a clean surface. Spoon about 2 tablespoons of the filling onto the lower third of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Use a small dab of water to seal the edges.
  4. Arrange the egg rolls on a parchment-lined baking sheet or air fryer basket. Brush lightly with olive oil for crispiness.
  5. Bake at 400°F (200°C) for 15-18 minutes or air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through. The egg rolls should be golden and crispy.
  6. Let them cool slightly, then serve with your favorite dipping sauce like salsa, guacamole, or sour cream.

Notes

Don’t overfill the wrappers to avoid tearing. Prep the filling ahead of time for convenience. Adjust spice levels to suit your taste.
