  • 3 tablespoons mayonnaise
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon Dijon mustard

  • 1/8 teaspoon black pepper
  • Paprika, for garnish
  • Fresh chives, optional garnish

Instructions

  1. Place the eggs in a medium saucepan and cover with cold water. Bring to a boil, then reduce the heat to a simmer and cook for 10 minutes. Remove the eggs and transfer them to an ice bath to cool.
  2. Once cooled, gently peel the eggs. Rinse under cold water to remove any leftover shell bits.
  3. Use a sharp knife to cut each egg in half lengthwise. Carefully remove the yolks and place them in a mixing bowl.
  4. Mash the yolks with a fork or whisk until smooth. Add the mayonnaise, chili garlic sauce, Dijon mustard, salt, and black pepper. Mix until creamy and well combined.
  5. Spoon or pipe the yolk mixture into the egg white halves. Make sure each one is generously filled.
  6. Sprinkle the deviled eggs with paprika and fresh chives for a vibrant finish.
  7. Serve immediately or refrigerate until ready to enjoy.

Notes

For a smoother filling, use a whisk instead of a fork to mash the yolks. Adjust the spiciness by adding chili garlic sauce gradually. These eggs are best served cold and can be made a day in advance.
