A quick and easy 30-minute stir fry featuring juicy chicken, chewy ramen noodles, and a sticky, spicy-sweet honey garlic sauce. Perfect for busy weeknights or when you crave homemade takeout with a fiery kick.

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tablespoon cornstarch
  • Salt & pepper, to taste
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon sriracha or chili garlic sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 packs ramen noodles (about 6 oz total), discard seasoning packets
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1/2 cup thinly sliced bell pepper
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 1 teaspoon red chili flakes (optional)
  • Sesame seeds, for garnish
  • Extra sliced green onions, for garnish
  • Lime wedges, for serving

Instructions

  1. Pat chicken dry and cut into bite-sized pieces.
  2. Toss chicken in a mixing bowl with cornstarch, salt, and pepper.
  3. Set aside while prepping veggies and sauce.
  4. In a small bowl, whisk together honey, garlic, soy sauce, sriracha, rice vinegar, and sesame oil. Adjust spice to taste.
  5. Bring a medium saucepan of water to a boil. Add ramen noodles and discard seasoning packets. Boil for 2-3 minutes until just tender.
  6. Drain noodles and rinse under cold water. Set aside.
  7. Heat vegetable oil in a large skillet or wok over medium-high heat.
  8. Add chicken in a single layer. Cook for 4-5 minutes, stirring occasionally, until golden brown and cooked through. Transfer chicken to a plate.
  9. Add broccoli, bell pepper, and carrots to the hot pan. Cook for 2-3 minutes, stirring, until veggies are bright and just tender.
  10. Return chicken to the pan with veggies. Pour in the honey garlic sauce and toss everything together.
  11. Cook for 2-3 minutes, stirring, until sauce thickens and coats everything.
  12. Add drained ramen noodles to the pan. Toss gently with tongs to combine.
  13. Cook for 1-2 minutes, until noodles are hot and well coated. Add a splash of water if sauce is too thick.
  14. Sprinkle with sliced green onions, sesame seeds, and optional chili flakes.
  15. Squeeze lime wedges over each bowl and serve immediately.

Notes

For gluten-free, use rice noodles and Tamari. Adjust spice level by varying sriracha and chili flakes. Prep all ingredients before cooking for best results. Leftovers keep well in the fridge for up to 3 days; add a splash of water when reheating. Garnish with lime for brightness.
