  • 3 ¾ cups (470g) all-purpose flour
  • 1 packet (2 ¼ tsp) active dry yeast
  • ¼ cup (50g) granulated sugar
  • ½ tsp salt
  • ¾ cup (180ml) warm milk
  • 2 large eggs, room temperature
  • 1/3 cup (75g) unsalted butter, softened
  • ¾ cup (150g) brown sugar
  • 2 ½ tsp ground cinnamon
  • 6 tbsp (85g) unsalted butter, softened
  • 1 ½ cups (180g) powdered sugar
  • 2 tbsp (30ml) milk
  • ½ tsp vanilla extract
  • Orange and black food coloring
  • Halloween sprinkles
  • Edible googly eyes

Instructions

  1. Prepare the Dough: In a large mixing bowl, combine the warm milk, yeast, and sugar. Let it sit for about 5 minutes until it’s foamy. Add the eggs, softened butter, and salt, and mix well. Gradually add the flour, one cup at a time, until the dough comes together.
  2. Knead the Dough: Knead the dough for about 8-10 minutes (or use a stand mixer for 5-6 minutes). It should be smooth and elastic but not sticky. If needed, add a tablespoon of flour at a time to adjust the texture.
  3. Let It Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for 1-2 hours, or until it doubles in size.
  4. Prepare the Filling: In a small bowl, mix the brown sugar and cinnamon. Set aside.
  5. Roll Out the Dough: Once the dough has risen, punch it down and roll it out on a floured surface into a 12×18-inch rectangle.
  6. Add the Filling: Spread the softened butter evenly over the rolled-out dough. Sprinkle the cinnamon-sugar mixture over the butter, making sure to cover the entire surface.
  7. Roll and Cut: Starting from the longer edge, tightly roll the dough into a log. Use a sharp knife or unflavored dental floss to cut the roll into 12 even pieces.
  8. Second Rise: Place the rolls into a greased 9×13-inch pan, cover, and let them rise for another 30 minutes.
  9. Bake the Rolls: Preheat your oven to 375°F (190°C). Bake the rolls for 20-25 minutes or until they’re golden brown.
  10. Make the Frosting: In a bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Divide the frosting into two bowls and add orange food coloring to one and black food coloring to the other.
  11. Decorate: Let the rolls cool for about 10 minutes, then use a spoon to drizzle the orange and black frosting over the top in spooky patterns. Add Halloween sprinkles or edible googly eyes for a creepy touch!
