  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 12 oz fettuccine or your favorite pasta
  • Water and salt for boiling
  • Fresh parsley, chopped (optional)
  • Red pepper flakes (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a bowl, toss the steak pieces with garlic powder, paprika, salt, and pepper. Ensure the seasoning is evenly distributed.
  3. Heat olive oil in a large skillet over medium-high heat. Add the steak bites in a single layer and sear for 2-3 minutes per side until browned and cooked to your desired doneness. Remove and set aside.
  4. In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Pour in the heavy cream and whisk until combined. Simmer for 3-5 minutes, stirring frequently. Gradually add Parmesan cheese, whisking until melted and smooth. Season with salt and pepper to taste.
  5. Add the cooked pasta to the Alfredo sauce, tossing to coat. If the sauce is too thick, stir in a splash of reserved pasta water until you reach your desired consistency.
  6. Transfer the sauced pasta to a serving dish or plate. Top with steak bites and garnish with fresh parsley and red pepper flakes if desired.
  7. Serve immediately while the pasta and steak are warm and fresh.
