These Strawberry Cheesecake Bliss Balls are a creamy, strawberry-infused treat with a tangy cheesecake flavor, perfect as a healthy snack or dessert.

Ingredients

  • 1 cup raw unsalted cashews
  • 1/2 cup freeze-dried strawberries
  • 6 Medjool dates, pitted
  • 1 teaspoon vanilla extract
  • 1/4 cup almond flour
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Optional: white chocolate chips
  • Optional: shredded coconut for coating

Instructions

  1. Measure out all the ingredients. If your Medjool dates are not soft, soak them in warm water for 10 minutes and drain.
  2. Add the raw cashews to a food processor and pulse until they form a fine powder. Be careful not to over-process.
  3. Add the freeze-dried strawberries to the food processor and pulse until they are broken down into a fine powder and evenly mixed with the cashews.
  4. Add the Medjool dates, vanilla extract, almond flour, lemon juice, and a pinch of salt. Process until the mixture forms a sticky dough. If it’s too dry, add a teaspoon of water at a time until it comes together.
  5. Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat until all the dough is used.
  6. Optional: Roll the bliss balls in shredded coconut or drizzle with melted white chocolate for extra flair.
  7. Place the finished bliss balls on a tray and refrigerate for at least 15 minutes before serving.

Notes

Chill the bliss balls for better texture and flavor. Adjust sweetness or consistency by adding honey, maple syrup, almond flour, or water as needed.
