A playful twist on the classic strawberry shortcake, these bite-sized sushi-style rolls are perfect for parties, brunches, or cozy nights at home.

Ingredients

  • Pound cake, sliced thinly
  • Fresh strawberries, washed, hulled, and sliced into thin strips
  • Whipped cream (pre-made or homemade with powdered sugar and vanilla extract)
  • Strawberry jam
  • Powdered sugar, for sprinkling
  • Optional toppings: crushed graham crackers, white chocolate drizzle, or sprinkles

Instructions

  1. Slice the pound cake into thin, even strips about 1/4 inch thick. Arrange the sliced strawberries and set aside.
  2. Place a sheet of plastic wrap on your countertop. Arrange the pound cake slices side by side, slightly overlapping, to form a rectangular sheet.
  3. Using a spatula, gently spread a layer of whipped cream over the cake. Follow with a thin layer of strawberry jam.
  4. Lay the strawberry slices in a single row along the edge of the cake closest to you.
  5. Carefully lift the plastic wrap and start rolling the cake away from you, creating a tight cylinder. Use the plastic wrap to secure the roll and twist the ends to hold it in place.
  6. Place the roll in the refrigerator for 15-20 minutes to set and make slicing easier.
  7. Remove the plastic wrap and slice the roll into 1-inch pieces. Arrange on a serving plate and sprinkle with powdered sugar or your favorite toppings.

Notes

Chill the whipped cream and strawberries beforehand to make assembly easier. Avoid overfilling the rolls to prevent bursting. Use ripe strawberries for the best flavor.
