  • 1.5 pounds flank steak or sirloin, thinly sliced against the grain
  • 4 cups fresh broccoli florets (about 300g)
  • 2 tablespoons fresh grated ginger
  • 3 cloves garlic, minced
  • 1/3 cup low-sodium soy sauce (80ml)
  • 2 tablespoons brown sugar (light or dark)
  • 1 tablespoon sesame oil
  • 1/2 cup beef broth (120ml), preferably low sodium
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)
  • 2 stalks green onions, thinly sliced
  • Optional: toasted sesame seeds for garnish

Instructions

  1. Slice the beef into thin strips against the grain using a sharp knife. (About 10 minutes; optionally freeze beef for 20 minutes beforehand to ease slicing.)
  2. Wash and trim broccoli florets and set aside.
  3. In a mixing bowl, whisk together soy sauce, brown sugar, grated ginger, minced garlic, sesame oil, and beef broth until sugar dissolves and mixture is smooth.
  4. Place sliced beef into the slow cooker. Pour the ginger soy glaze over the beef and stir gently to coat evenly. Cover and cook on LOW for 4 to 5 hours.
  5. After 4 hours, add broccoli florets on top of the beef. Mix lightly to combine. Cover and cook for an additional 30 minutes to 1 hour on LOW until broccoli is bright green and tender-crisp.
  6. About 15 minutes before serving, stir in the cornstarch slurry to thicken the sauce. Cook uncovered for the remaining time, stirring occasionally.
  7. Once done, sprinkle sliced green onions and toasted sesame seeds over the top. Stir gently before serving.

Notes

Slice beef against the grain for tenderness. Add broccoli near the end to keep it crisp. Use low-sodium soy sauce or tamari for gluten-free option. Thicken sauce with cornstarch slurry for a glossy finish. Optionally add red pepper flakes for spice or substitute sugar snap peas for broccoli in summer.
