  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900 g)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/3 cup low carb BBQ sauce (about 80 ml)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: pinch of cayenne pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, apple cider vinegar, smoked paprika, garlic powder, onion powder, chili powder, ground cumin, salt, and black pepper. Whisk until well blended.
  3. Pat the chicken thighs dry with paper towels. Add the thighs to the marinade bowl and toss to coat evenly. Marinate for at least 15 minutes at room temperature or up to 2 hours in the fridge.
  4. Place a wire rack on a baking sheet and arrange the chicken thighs skin-side up. If no rack is available, place thighs directly on a parchment-lined baking sheet.
  5. Roast the chicken in the oven for 25 minutes.
  6. Remove the chicken and brush each thigh generously with low carb BBQ sauce. Return to the oven and bake for another 10-12 minutes.
  7. Check the internal temperature with a meat thermometer; it should read 165°F (74°C). If needed, roast a few more minutes.
  8. Let the chicken rest for 5 minutes before serving.

Notes

Pat chicken skin dry before marinating for extra crispy skin. Marinate at least 15 minutes or up to 2 hours for best flavor. Brush BBQ sauce near the end of cooking to avoid burning. For extra crispy skin, broil for 2-3 minutes at the end while watching closely. Bone-in thighs keep meat juicier than boneless. Leftovers store well in fridge up to 4 days or freeze up to 3 months.
