A simple, flavorful slow cooker Mississippi pot roast featuring tender chuck roast, ranch seasoning, pepperoncini peppers, and butter. Minimal prep with a comforting, savory-tangy sauce perfect for busy weeknights.

  • 34 pounds chuck roast (well-marbled)
  • 1 packet ranch seasoning mix (about 1 ounce / 28 grams)
  • 1 packet au jus gravy mix (about 1 ounce / 28 grams)
  • 1/2 cup unsalted butter (1 stick / 113 grams), softened or sliced
  • 810 pepperoncini peppers, whole or sliced, plus 2 tablespoons pepperoncini juice
  • 1/2 cup beef broth (optional)
  • Salt and pepper to taste

Instructions

  1. Pat the chuck roast dry and trim off any large chunks of fat.
  2. Sprinkle ranch seasoning mix and au jus gravy mix evenly over all sides of the roast and rub gently to coat.
  3. Place the seasoned roast into the slow cooker.
  4. If using, pour beef broth around the roast.
  5. Scatter pepperoncini peppers over the roast and pour in 2 tablespoons of their juice.
  6. Place the sliced butter evenly over the top of the roast.
  7. Cover and cook on low for 8 hours or on high for 4-5 hours, avoiding lifting the lid during cooking.
  8. Check tenderness with a fork; if not tender, cook an additional 30-60 minutes.
  9. Remove the roast and slice or shred it.
  10. Spoon the buttery, tangy sauce over the meat and serve.

Notes

Keep the lid closed during cooking to retain moisture and heat. Searing the roast before slow cooking is optional but not necessary. For thicker gravy, mix 1 tablespoon cornstarch with 1 tablespoon cold water and heat the cooking liquid until thickened. Adjust pepperoncini quantity to control heat level. Store leftovers in airtight containers in the refrigerator for up to 4 days or freeze for up to 3 months.
