  • 8 ounces (225 grams) green beans, trimmed

Instructions

  1. Pat the pork tenderloin dry with paper towels and trim any excess fat or silver skin.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, and apple cider vinegar until smooth and glossy. Set aside.
  3. Toss carrots, baby potatoes, and green beans with olive oil, salt, and pepper. Spread evenly in the slow cooker base or roasting pan.
  4. Place the trimmed pork tenderloin on top of the vegetables. Pour the honey garlic sauce evenly over the pork and vegetables.
  5. Cover and cook on LOW for 6 to 7 hours or HIGH for 3 to 4 hours until pork reaches an internal temperature of 145°F (63°C) and is tender.
  6. Remove pork and let rest for 5 minutes before slicing. Stir vegetables gently to coat with sauce. For thicker sauce, simmer liquid in a saucepan for 5 minutes until reduced.
  7. Slice pork against the grain into 1/2-inch thick pieces. Serve with roasted vegetables and drizzle with honey garlic sauce. Garnish with fresh herbs if desired.
