  • 2 cups (400g) granulated sugar
  • 2 large eggs, room temperature
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • 8 oz (225g) semi-sweet chocolate, chopped
  • 1 ¼ cups (300ml) heavy cream, chilled
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp unsalted butter (optional)
  • 1 ½ cups (360ml) heavy cream
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • Chocolate shavings (optional)
  • Fresh berries (optional)
  • Cocoa powder dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line the bottoms with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the sugar, eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined. Slowly pour in the boiling water while mixing.
  5. Divide the batter evenly between the pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the cakes cool completely before removing them from the pans.
  7. Melt the chopped chocolate using a double boiler or microwave in 20-second increments, stirring frequently.
  8. Let the chocolate cool slightly, then stir in the butter (optional).
  9. In a chilled bowl, whip the heavy cream with powdered sugar and vanilla until soft peaks form.
  10. Gently fold the whipped cream into the cooled chocolate until smooth and fluffy.
  11. Place one chocolate cake layer on a serving plate or cake stand.
  12. Spread a generous layer of chocolate mousse evenly over the top.
  13. Add the second cake layer and repeat with more mousse.
  14. Finish with the whipped cream topping, spreading it smoothly over the cake.
  15. Decorate the cake with chocolate shavings, fresh berries, or a dusting of cocoa powder.
  16. Refrigerate for at least 2 hours before serving to allow the mousse to set.
