  • 1 ½ cups (300g) granulated sugar
  • ¾ cup (65g) unsweetened cocoa powder
  • 3 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 cup (130g) all-purpose flour
  • ½ tsp salt
  • ½ tsp baking powder
  • 2 cups (200g) mini marshmallows (or regular marshmallows chopped into smaller pieces)
  • 1 ½ cups (260g) semi-sweet chocolate chips (mix milk and dark chocolate)
  • 1 ½ cups (120g) graham cracker crumbs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the melted butter and granulated sugar until smooth and glossy, about 2 minutes. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  3. In a separate bowl, sift together cocoa powder, flour, salt, and baking powder.
  4. Gradually fold the dry ingredients into the wet mixture using a rubber spatula until just combined. Do not overmix.
  5. Pour half the brownie batter into the prepared pan and spread evenly. Sprinkle half of the graham cracker crumbs, chocolate chips, and mini marshmallows over the batter.
  6. Spread the remaining brownie batter on top, then finish with the remaining graham cracker crumbs, chocolate chips, and marshmallows.
  7. Bake for 30-35 minutes, watching the marshmallows to ensure they become golden brown and puffed but not burnt. Insert a toothpick into the center; it should come out with a few moist crumbs.
  8. Let the brownies cool completely on a wire rack before cutting.
  9. Optional: Warm individual squares in the microwave for 10 seconds before serving for extra gooeyness.

Notes

Do not overmix the batter to keep brownies fudgy. Use mini marshmallows for even melting or chop large marshmallows into smaller pieces. Watch marshmallows closely in the last 5 minutes to prevent burning. Let brownies cool completely before cutting for neat squares. For gluten-free, substitute flour with almond flour or gluten-free blend. For dairy-free/vegan, use vegan butter, dairy-free chocolate chips, and flax eggs.
