  • 1/4 cup (20g) toasted coconut flakes

Instructions

  1. Heat 3 tablespoons (45 ml) of cooking oil in a large, heavy-bottomed pot over medium-high heat. Add 3 popcorn kernels and cover with a lid. Once they pop, the oil is hot enough.
  2. Add the remaining 1 cup (200g) of popcorn kernels, cover, and shake the pot gently every 15 seconds to prevent burning. Popping should take about 3-5 minutes. Remove from heat when popping slows to 2-3 seconds between pops.
  3. Melt 4 tablespoons (60g) of unsalted butter in a small saucepan over low heat. Stir in 1 teaspoon (5g) sea salt and 1/2 teaspoon (1g) smoked paprika. Keep warm.
  4. Pour the popped popcorn into a large mixing bowl, discarding any unpopped kernels.
  5. Slowly drizzle the melted butter mixture over the popcorn, tossing gently with a spoon or tongs to coat evenly.
  6. Toast 1/2 cup (60g) chopped nuts and 1/4 cup (20g) coconut flakes on a baking sheet at 350°F (175°C) for 5-7 minutes, stirring halfway. Let cool.
  7. Arrange the popcorn in a large bowl or tray. Set out toppings such as toasted nuts, mini chocolate chips, sprinkles, dried fruit, mini marshmallows, and drizzle sauces (honey or maple syrup) in small bowls with spoons for customization.
