A bold, crowd-pleasing nacho bake layered with spicy ranch seasoned ground beef, melty cheeses, and crispy tortilla chips, perfect for game day and parties.

  • 12 ounces (340 grams) sturdy tortilla chips
  • 1 pound (450 grams) ground beef (80/20 recommended)
  • 2 tablespoons ranch seasoning mix (store-bought or homemade)
  • 2 cups (200 grams) shredded sharp cheddar cheese
  • 1 cup (100 grams) shredded Monterey Jack cheese
  • 3 stalks green onions, thinly sliced
  • 12 jalapeños, thinly sliced (optional)
  • 1 cup (150 grams) diced tomatoes, fresh or canned, drained
  • 1 cup (170 grams) black beans, drained and rinsed
  • Sour cream, for serving
  • Fresh cilantro, a handful chopped (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking apart with a spatula. When halfway cooked, sprinkle in ranch seasoning mix and stir to coat evenly. Cook until fully browned, about 7 minutes. Drain excess fat if necessary.
  3. Spread half of the tortilla chips evenly in the bottom of a 9×13 inch (23×33 cm) baking dish.
  4. Spoon half of the seasoned beef evenly over the chips. Sprinkle 1 cup shredded cheddar cheese over the beef.
  5. Add the remaining chips on top of the cheese, pressing gently to create an even surface.
  6. Spread the remaining beef over the chips. Sprinkle 1 cup shredded Monterey Jack cheese evenly. Dot with sliced jalapeños if using.
  7. Scatter black beans and diced tomatoes over the top. Sprinkle sliced green onions for brightness.
  8. Bake in the oven for 15-20 minutes, or until cheese is melted and bubbly and edges are golden.
  9. Remove from oven and let cool for 5 minutes. Dollop sour cream on top and sprinkle chopped fresh cilantro if desired before serving.

Notes

Drain excess fat from beef to prevent soggy chips. Use fresh shredded cheese for better melting. Press chips gently when layering to prevent sliding. Let bake rest 5 minutes before serving for easier slicing. Can prepare layers ahead and refrigerate before baking. For extra gooey cheese, add a cheese layer between beans and tomatoes but avoid overloading.
