  • 2 teaspoons pure vanilla extract
  • Gel food coloring: red, orange, yellow, green, blue, and purple

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the dry ingredients: all-purpose flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar using an electric mixer on medium speed until pale and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, followed by the vanilla extract, mixing until fully combined and smooth.
  5. Reduce mixer speed to low and gradually add the dry ingredients in three parts, mixing just until incorporated each time.
  6. Divide the dough evenly into six small bowls. Add a few drops of each gel food coloring to each bowl and mix gently until the color is uniform and vibrant.
  7. Using a tablespoon or cookie scoop, take equal portions from each colored dough and arrange them side-by-side on the baking sheet, gently pressing them together to form a rainbow block or arrange small dollops next to each other for a striped effect.
  8. Bake for 12-15 minutes, rotating the pans halfway through, until edges are light golden brown and centers look set but still soft.
  9. Cool the cookies on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use gel food coloring to achieve vibrant colors without altering dough consistency. Chill dough for 15-20 minutes before shaping to keep colors sharp and prevent bleeding.
