Vibrant Fresh Pea Soup Recipe with Creamy Mint Topping

A quick, healthy, and easy-to-make fresh pea soup topped with a creamy mint mixture, perfect for spring and summer. This soup is vibrant, comforting, and packed with fresh flavors.

Ingredients

  • 4 cups fresh or frozen peas (about 600 grams)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth (1 liter), low-sodium
  • 2 tablespoons olive oil
  • 1/2 cup fresh mint leaves, tightly packed
  • 1/2 cup heavy cream or Greek yogurt (120 ml)
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Heat 2 tablespoons olive oil in a large saucepan over medium heat. Add the finely chopped onion and cook until translucent but not browned, about 5 minutes.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the peas (no need to thaw if frozen) and stir to combine. Pour in 4 cups of broth and bring to a gentle boil.
  4. Reduce heat and simmer uncovered for 10 minutes until peas are soft and flavors meld.
  5. Remove from heat and puree the soup using an immersion blender until smooth. For an ultra-smooth texture, push the soup through a fine mesh sieve.
  6. Stir in 1 tablespoon lemon juice, then season with salt and pepper to taste.
  7. In a small bowl, combine 1/2 cup heavy cream or Greek yogurt with finely chopped or lightly crushed fresh mint leaves. Season with a pinch of salt and mix well.
  8. Ladle the soup into bowls and top each with a generous dollop of the mint cream topping. Serve warm.

Notes

If the soup is too thick after blending, add extra broth or water to reach desired consistency. Prepare soup base a day ahead and add mint cream just before serving. Use fresh mint for best flavor. For vegan version, substitute cream and yogurt with coconut or cashew cream and use vegetable broth.
