Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the softened unsalted butter and granulated sugar with an electric mixer on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in two large eggs, one at a time, ensuring each is fully mixed before adding the next. Stir in the 2 teaspoons of pure vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low speed just until combined. Do not overmix.
  6. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  7. Lightly flour your work surface and rolling pin. Roll the chilled dough to about ¼-inch (6mm) thickness. Use shamrock-shaped cookie cutters to cut out shapes, placing them about 1 inch (2.5cm) apart on the prepared baking sheets.
  8. Bake for 8-10 minutes or until the edges just start to turn golden but the centers look set. Avoid overbaking.
  9. Transfer cookies to a wire rack and let cool for at least 15 minutes before icing.
  10. In a medium bowl, whisk together powdered sugar, 3 tablespoons milk, light corn syrup, and vanilla extract until smooth. Add green gel food coloring a drop at a time until desired color is reached. Adjust thickness with more milk or powdered sugar as needed.
  11. Using a spoon or piping bag, spread or pipe the glossy green icing onto each cookie. Let the icing set at room temperature for at least one hour before stacking or storing.
